4-topped Yeast Bread

A relatively easy, delicious white yeast bread that's beautiful on the table with any meal. Sliced, it makes really great sandwiches too!
Ingredients:
1 pkg. (1/4 oz.) quick-acting dry yeast
3/4 c. warm water (115 degrees)
1 c. warm milk
1/4 c. sugar
1/4 c. butter, softened (1/2 stick)
1 egg, separated
4 to 4-1/2 c. bread flour
1-1/2 tsp. salt
1 t. water
1 tsp. each of kosher salt, sesame seeds, poppy seeds, dried minced onion (mix them together for crust topping)
Directions:
1. In large bowl of stand mixer, dissolve yeast in warm water. Add milk, sugar, butter, egg yolk, salt, and 2 cups of the flour. With dough hook attachment, beat on medium speed for 3 minutes. Mix in enough remaining flour to form a soft dough (it will be sticky).
2. Turn onto a clean, dry, floured counter. Knead until smooth and elastic, about 6-8 minutes, sprinkling in additional flour as needed. Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour.
3. In small bowl, beat together egg white and water. Sprinkle seed mixture onto a dinner plate.
4. Punch dough down. Turn onto a lightly floured surface, divide in half, shape into two round loaves. Brush bottom of loaf with egg white then dip onto seed mixture to coat the bottom. Place on cookie sheet sprayed with cooking spray. Brush top and sides of loaf with egg white, then sprinkle with seed mixture to cover heavily. Repeat for second loaf.
5. Cover and let rise in a warm place until doubled, about 30 minutes.
6. Bake at 375 degrees for 20-25 minutes or until golden brown. Break apart or slice and serve warm.
