3b Muffins Bran Banana Blueberry

These wholesome muffins mix up very quickly and freeze well. They are a great take along when you are on the road and need a breakfast or snack.
Ingredients:
1 cup wheat bran
1 cup mashed bananas
3/4 cup plus 2 tbsp. low fat buttermilk
2 tablespoons molasses
1/4 cup oil (canola is best)
1 egg or 1/4 cup egg substitute
1-1/2 cups whole wheat flour
1 tbsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 cup fresh or frozen blueberries
1/2 cup chopped nuts (optional)
Directions:
1. In a large bowl combine bran, mashed banana, and milk, stirring well.
2. Let stand 5 minutes then add molasses, oil, and egg and mix well.
3. In another bowl, combine flour, baking powder, cinnamon and salt and nuts if using.
4. Gently toss blueberries into flour mixture.
5. Stir into the bran mixture until just combined.
6. Spoon into greased or paper lined muffin tins.
7. Bake at 375°F for 20 to 30 minutes.
8. Let cool in pan 10 minutes, then cool on rack, or eat while warm.
9. Makes 12 muffins
