You can use any leftover meat for this recipe to make a fresh new entree! lettuce, cooked rice, cucumber, peeled and sliced 1/2 ea - cilantro, fresh chopped 1 Tbsp - fresh mint, chopped 1 Tbsp - lean pork or chicken or beef, cooked and sliced - 3 oz chopped dry-roasted peanuts or cashews 1 Tbsp - light soy sauce Use 0.2, 0.21 or 0.25 to calcuate correct portion of the num choc recipe cvt
Ingredients:
meat and vegetable bowl
1 cup lettuce leaves
1 cup cooked rice
1/2 cucumber, peeled and sliced
1 tbsp cilantro, fresh chopped
1 tbsp fresh mint, chopped
3 oz cooked lean pork (10027), or other leftover meat, sliced
1 tbsp chopped unsalted dry-roasted peanuts (16390) or cashews
1 tsp lite soy sauce
nuom choc sauce
1/4 tbsp rice wine vinegar
1/4 tbsp lime juice
1/2 tbsp fish sauce
1/2 tbsp water
1/4 tbsp sugar
1/4 tsp dry white wine
1/4 tbsp sugar
1/4 clove garlic, minced
1/16 tsp cayenne pepper
1/4 tbsp (finely julienned) carrot
1/4 tbsp (finely julienned) green onion

11. Prepare Nuom Chuc sauce by combining all the ingredients in a small, nonplastic bowl and stir until the sugar dissolves. Set aside.
12. Chop the lettuce into long strips and place in a small, deep bowl. In layers, add the rice and cucumber. Sprinkle with the cilantro and mint.
13. Add the cooked pork, peanuts and soy sauce. Add the Nuom Chuc sauce to taste and serve.
