3 Veggie Ragout

This can be done with any 3 veggies. It needs to have the tomatoes as one of them.
Ingredients:
1 med zuchinni diced
3 small tomatoes diced
1/4 cup chopped onions
2 cloves garlic smashed
1 tsp of olive oil
1 tsp of oregano
1/2 tsp salt
1/8 tsp pepper
Directions:
1. Heat olive oil in non stick skillet over med high. Add onions and garlic. Cook until onions are soft and translucent. Add zuchinni, salt, pepper and oregano. Cook until zuchinni is soft, not mushy. Add tomatoes and cook for another 3 min or unitl tomatoes break down and form a chunky sauce.
2. Serve warm or at room temp.
