3 P's  Salad   (Peas, Pickle, Peanut)

Ingredients:

  • 1 (15 oz) can sweet peas
  • 3 -4 small sweet gherkins
  • 1/2-3/4 cup unsalted peanuts
  • 1 tbsp mustard
  • 1 tbsp sugar
  • 1/2 cup cream (or half n' half)

Directions:

  1. Drain peas and place in bowl.
  2. Put peanuts and pickles in food processor and grind until gravel-like. Add to bowl.
  3. Mix in the pickle juice.
  4. Combine mustard, sugar, and cream together.
  5. Allow to sit 10-15 minutes for the sugar to dissolve.
  6. Mix in with the 3 P's.
  7. Serve at room temperature.
