Great muffins
Ingredients:
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
4 egg whites
2/3 cup sugar
1/4 cup oil
1/2 teaspoon vanilla
1 1/2 cups any combination of shredded carrots (use all carrots or all zucchini or half of each) or 1 1/2 cups shredded zucchini (use all carrots or all zucchini or half of each)
1/2 cup raisins (optional)
Directions:
1. Sift together flours, baking powder, cinnamon, baking soda and salt.
2. In a large bowl whisk together egg whites, sugar, oil, and vanilla.
3. Mix in dry ingredients until combined.
4. Stir in zucchini and raisins spoon mix into prepared muffin cups.
5. Bake at 375°F for 20 minutes or until toothpick comes out clean.
6. Makes 1 dozen.
