3 Cheese Scallop Pototoes

Love to take 4-5 different recipes and take a little from this one and little from that one, and Wha La,my creation. Hope you enjoyed as much as we did
Ingredients:
4 cups thinly sliced potatoes ( i leave on the skins)
1 small onion choppped
3 garlic cloves, chopped fine
1 tsp salt
3 tbsp flour
4-6 tbsp butter
1/4 cup chives (fresh or dried)
1-1/4 cups half n half
1 tsp salt
1 tsp pepper
1/2 tsp paprika
1 tsp dried mustard
24 oz pkg of shredded cheddar cheese mix
1/2 cup parmesan cheese
1 cup blue cheese
Directions:
1. In boiling salted water, add sliced pototoes and parboil about 6-8 minutes only.
2. In frying pan, saute butter with onion, chives & garlic for about 3-5 minutes.
3. In bowl add flour, salt, pepper, paprika & mustard; mix
4. Whisk into onion mixture and stir till pasty.
5. Whisk in Half N Half and on medium low heat, whisk until it begins to thicken.
6. In a buttered 9 x 13 pan, you will be doing 2 layers of each of: pototoes, sauce & cheese
7. First layer: pototoes
8. Second Layer: Sauce
9. Third Layer: Cheeses; Note: (all blue cheese goes here)
10. Repeat Layers ending with Cheeses
11. Note: If it looks too dry; add more Half N Half, but not too much to flood it.
12. Bake at 350 for 35-45 minutes or till pototoes are tender and cheeses are melted & golden brown
13. Take out of oven and let sit for about 5 minutes
