3 Cheese Bacon Quiche

Very filling protein packed quiche, good for any meal.
Ingredients:
1 3/4 c flour
1 stick butter, very cold, cut into tiny cubes
1 egg
1 t sour cream
6 eggs
1/2 c heavy cream
1/2 c skim milk
2 oz gorgonzola cheese, cubed
2 oz brie cheese, cubed
2 oz swiss cheese, cubed
4 oz bacon
1/2 medium yellow onion, roughly chopped
Directions:
1. FOR PIE CRUST: Blend together butter and flour with your fingertips or a pastry blender until it has the consistency of coarse sand. Make a hollow in the center of this mixture and add 1 egg and sour cream. Blend together with your hands, kneading until the dough comes together. Chill one hour before rolling out to 3/8 inch. Place in 9 inch pie pan and prick bottom of crust with a fork.
2. FOR QUICHE: Cook bacon. Drain pan, but leave in a very little bit of grease. Sautée onion in this grease until soft and translucent. In a medium bowl, combine remaining eggs, cream, milk, and salt and pepper to taste. Place bacon, onions, and cheeses in the pie crust. Cover with the egg mixture. (It helps to place the pan in the oven before adding the egg mixture, to avoid spills). Bake at 350ºF for 40-50 minutes, or until a knife stuck into the center of the quiche comes out clean.
