3-Can Burritos

An easy and healthy vegetarian burrito filling that tastes delicious.
Ingredients:
1 teaspoon olive oil
1 onion, diced
1 garlic clove, diced
1 red chili, minced (with or without seeds)
1 teaspoon cumin
1 red bell pepper, diced
10 button mushrooms, sliced
1 (400 g) can kidney beans, drained and rinsed
1 (400 g) can refried beans
1 (400 g) can diced tomatoes
tortilla, lettuce, tomatoes, avocado, sour cream, limes, to serve
Directions:
1. Heat the oil in a large saucepan and saute onion, garlic, chilli and cumin until fragrant and soft.
2. Add bell pepper and mushrooms. Saute until soft.
3. Add both types of beans and the tomatoes. Bring to the boil then reduce heat to low and simmer for 15-20 minutes.
4. Serve with warm tortillas and other fillings at the table for people to wrap into burritos.
