This is an easy and colorful side salad.
Ingredients:
2 eggs
2 tbsps lemon juice
4 tbsps sugar
2 tbsps butter
2 bananas (cut into 1/2 slices)
2 oranges (cut in pieces)
14 ozs. fruit cocktail (well drained)
14 ozs. crushed pineapple (well drained)
2 cups mini marshmellows
1 cup cool whip
Directions:
1. Beat eggs well and place in a double boiler, add lemon juice and sugar beating constantly until thick and smooth.
2. Add butter and cool.
3. When cooled , fold in cool whip and fruit mixture.
4. Place in a 9x12 pan and put in the fridge for 24 hrs. Cut into squares and serve.
