My DD passed this one on to me when her family was stationed in Ft. Campbell, KY. She makes this often & her picky eater kids devour it. She serves it with flour tortillas, chopped lettuce, chopped black olives & diced tomatoes on the side.
Ingredients:
3-4 chicken breast, boneless/skinless
2-4 cans (14 1/2 oz) northern beans, not drained
1 14oz can mexican style stewed tomatoes
1 small can chopped green chilies
1-2 teaspoons chili powder
4 oz pepper jack cheese, cubed
4 oz monterey jack cheese, cubed
1 onion, chopped
1 fresh jalapeno, chopped (deseeded)
cayenne pepper, salt & pepper to taste
8 oz sour cream
Directions:
1. Saute chicken in a little olive oil with onion & jalapeno. Shred chicken & put all ingredients (except sour cream) into crock pot. Cook on low for at least 3 hours. Add sour cream last half hour.
