Really quick, but healthy. I love the sweet yet sour and a bit chili taste to it.
Ingredients:
2 tablespoons calamansi juice (about 8 pieces medium-size calamansi)
1/2 tablespoons fish sauce (patis)
1/2 cup water
2 (about 200 grams each) pieces cream dory fillets
1 small onion, sliced thinly
2 tomatoes, sliced
1 finger chili (siling pansigang)
1 eggplant, quarted and cut into 1/4-inch slices
Directions:
1. 1. Chop all vegetables needed.
2. 2. Prepare calamansi juice, fish sauce, water, finger chili in a bowl. Set aside mixture.
3. 3. Slice fish fillet in strips that would fit your microwave-safe bowl.
4. 4. Prepare foil or cling wrap on your microwave-safe bowl.
5. 5. Place fish on a bed of eggplants, chili, half of the onions, and tomatoes.
6. 6. Pour in mixture on your fish on the foil. Seal foil or cling wrap.
7. 7. Microwave for 10 minutes on high. Serve with freshly cooked rice.
