Totally defatted curry (about 1/5 of the calories of regular thai) Add 100g mori nu tofu + 60cal Add peanuts (1/2 tablespoon + 70cal) Red, green curry paste or mussaman can be used
Ingredients:
1/4 cup water
1/2 onion
2 teaspoons chopped garlic
1 teaspoon minced ginger
1 cup mushrooms
1 cup snow peas
1/2 cup green beans
2 cups vegetable broth, fatfree -- or water
3/4 cup soymilk, fatfree
1 teaspoon vanilla extract
1 tbl thai curry paste
1 tablespoon soy sauce
1/4 cup water
1 tablespoon cornstarch
Directions:
1. Put 1/4 cup water, chopped garlic, and ginger into a non-stick wok or deep skillet and heat over medium-high heat until water starts to boil. Add vegetables and cover.
2. While vegetables are cooking,
3. Add tofu (if using)
4. Mix curry paste into the soymilk and add the vanilla extract. Add soymilk mixture, (nuts if using) and soy sauce to the vegetables. Cook over medium heat for about 10 minutes.
5. Mix 1/4 cup water and cornstarch. Add to vegetables and stir until heated through and slightly thickened. Serve over rice or shirataki.
