Bran muffin with blueberries and flax seed.
Ingredients:
1 cup whole wheat graham flour
1 cup wheat bran, unprocessed (millers bran)
1 tsp baking soda
1/4 cup brown sugar
1 tsp cinnamon
1/8 tsp cloves
1/4 tsp salt
1 egg
8 oz. nonfat plain yogurt
1 tbsp oil
2 tbsp flax seed, ground
1 cup blueberries
Directions:
1. Preheat oven to 375ºF.
2. Mix dry ingredients thoroughly.
3. Add egg, yogurt and oil.
4. Add fruit.
5. Mix only until dry ingredients are moist.
6. Fill greased muffin pan and bake at 375ºF for 15-20 minutes.
