This is a favorite among many of my vegan and also non-vegan friends & family ;-D This recipe is SUPER versatile & can also be used as trail mix by adding dried fruit, nuts, marshmallows, chocolate chips & anything else you like.....it's also great with yogurt & ice cream!!!!!
Ingredients:
5 cups old fashioned oats
1 cup raw almonds (or any of your favorite nuts, optional) (optional) or 1 cup hazelnuts, coarsely chopped (or any of your favorite nuts) (optional)
3/4 cup millet
3/4 cup oat bran
3/4 cup wheat germ
1/4-1/2 cup packed brown sugar (to taste)
1 tablespoon ground cinnamon
1 cup apple cider or 1 cup apple juice
1/3 cup pure maple syrup
1/3 cup brown rice syrup
1 tablespoon canola oil
any amount dried fruit (optional)
any amount of raw nuts, coarsely chopped (optional)
hemp seeds (optional)
flax seed (optional)
Directions:
1. Preheat your oven to 325°F (165°C).
2. In a very large bowl, mix together the oats, nuts, millet, oat bran, wheat germ, brown sugar and cinnamon.
3. In a separate bowl, whisk together the apple juice, maple syrup, brown rice syrup and canola oil. Add to the dry mixture, mixing until combined and oat mixture is well coated.
4. Spread this mixture out on two parchment-lined baking sheets
5. Bake in preheated oven for about 50 to 60, gently tossing granola several times during baking (about every 15 min.) You don’t want the granola to burn or get too brown. (Although the granola might seem a little soft when you remove it from the oven, it will crisp-up once it cools.).
6. Let the granola cool completely on the baking sheets.
7. Once cool, stir in any of the extras and store in an airtight container. (at this point you could also add things like Hemp seeds or Flaxseeds but then make sure to store your granola in the fridge, but if you don't add the Hemp seeds or Flaxseeds then you DON'T need to store your granola in the fridge - or you could add your Hempseeds or Flaxseeds right before serving).
